20 Best Chip Carving Knife (2022 Updated)

I have two regrets. 1) I did not buy this sooner. 2) I did not buy an extra for gift around me. Different brands give this knife a different name: sausage, tomato, bagel, serrated utility. For me, this is my kitchen’s grunt.

I want to preserve my wonderful bread knife’s fine edge for bread only (Wüsthof Classic 4151), and postpone sharpening of my chef knife by not putting it to cut stone-hard stuff like melons and squash.

This knife fits the bill. Anything nasty in the kitchen goes to that knife, and it becomes fun. This, against watermelon, is so good it is almost laughable. The Mercer Renaissance series is in comparable to other classic knives.

It costs a fraction of the price. What’s the catch? Some say not the same quality of finish. The main difference I can think of is that the modern brand is sharpened at 14° each side, while Mercer are usually 20° each side, which is the old European standard.

This means it is sharp, though not evil sharp. The trade-off is that it should keep its edge longer. In the particular case of this knife, it is a good thing, because sharpening serrated knives is not a trivial thing (few bother, I heard), so it should keep it in a serviceable condition for a long time.

It’s hard to find a reliable professional knife sharpener these days. Hard to find one that does serrated knives. Harder to get both at once. Other than that, Mercer Renaissance and my other brand are the exact same steel type.

This is a full tang knife, and weight balance is wonderful. The tip is sharp. My take is that this belongs in your kitchen if you don’t feel being mean to your bread knife or chef knife. Give all your hatred to this knife, and it will take it!This item, alone, at such a good price, makes the shipping well worth it compared to similar knives you find in retail stores around you.

Our local church has a culinary training program for people who are either unemployed or underemployed, or just looking for a career change. Students graduate with a ServSafe food handler certification.

I teach a knife skills class there, and was not satisfied with the chef knives being used in the program. So I purchased 6 of the Mercer Renaissance 8 inch chef’s knives. I use one of these at home, and am quite pleased with it.

The bolsterless design of the knife is a plus, as the entire blade can be sharpened, without developing that hook that bolstered knives develop over time. These knives hold their edge very well, and so far, have been a huge success.

the blade wandering off away from my body. The blade has a modified (shortened) bolster to expose the full blade edge, allowing for easier sharpening. A full bolster protrudes to the edge, which would eventually prevent the blade’s edge to make contact with the board after many sharpenings.

This quality knife is also made with 9″ and 10″ blade lengths. The overall length of the 10″ knife is ~15-1/4″ which makes it a little large for everyday in-home work unless cooking for a large family.

My first chef’s knife was a Victorinox. They don’t have fancy handles like some blades; they’re functional. The handles are comfortable, not slippery, easy to wash and make you feel safe and in control when handling the knives.

So I decided to pick up a few more – both santoku, one fluted and one regular. They’re just general use kitchen knives and they work great. The fluting doesn’t really matter much for many things but it does means cut veg falls off the blade a little easier.

They’ve been just as expected – good knives, easy to use, sharp as heck! And they feel light and well balanced. I picked up a magnetic knife holder to hold the knives on the wall, which seems good so far – looks good and works well.

I’m a 13+ year chef veteran and I must say I’m very impressed with this knife. I have had a few knife kits in my career and I have been very choosie as of late what knives I should buy. This is my first expensive chef knife and it works well as a daily driver.

I started with the victorianox fibrox 8 inch chef knife to see the quality of the steel, and I use that as a “beater” knife in my work kitchen everyday. It holds an edge really well for the price, and if properly maintained it will last you a lifetime.

This particular knife has a balanced weight to it with a decent weight on the blade. It is thick at the neck to add that weight but the blade is very thin. It will tire you quickly with long projects but is great at getting those precise cuts.

It has a satin finish in the face which doesn’t make it stand out, but I don’t believe your knife needs to be painted gold and laced with diamonds to make it function. The rosewood handle adds lightness but a solid grip.

Since then I have bought many victorianox knives and will plan on finishing my knife set with all victorianox in my knife block.

I’m a knife enthusiast and have always been a fan of the practicality and value for money of Victorinox knives. This knife is no different. Its quite light in the blade and The handle is more akin to the smaller Victorinox knives (think paring, steak, bread knife) so its smaller in the hand than say the larger carving, boning, butchers knives with the handles that we usually use.

For me, with large hands it feels different and takes a little getting used to but It suits my wife perfectly. It takes and holds an edge well and is brilliant for slicing tasks. It performs excellently for the price.

If u have large hands and/or prefer a hefty knife then the forged version may be more suitable. All in all a great little knife though, especially for those with smaller hands.

Extremely sharp for my clumsy self lol cuts so smooth and I absolutely love it. Have cut myself several times. The point is very sharp too. The only problem I’ve encountered and I’m not sure if it’s just me or the knife that seems to sort of curb when I cut? Not sure how to explain like if I want to cut something straight and is think it seems to sort of not cut down straight.

Not sure if I have terrible cutting skills but I haven’t had other knives do that. Other than that I like it and the weight is just right not too heavy or bulky.

It does what it was designed to do. good product

I carve spoons and find this chip carving knife excellent and a good addition to my other knives.

I find Flexcut knives to be the best..they hold their edge and will respond nicely to leather stropping

Probably the most expensive part of wood carving is the purchase of all those carving tools to find the right ones for “you. ” I personally avoided the Flexcut brand believing this brand was going to be an inferior product for beginners not worthy of touching my carvings.

Lets just get down to the meat and potatoes of this review. I’m not going to type 5 long paragraphs like others trying to impress you with words that require you to have a second window open for dictionary,com to be readily available to help you understand.

They are sharp, its easy to keep them sharp, they last an incredibly long time before they need sharpening (leather strop w/ no compound ever so often while using them and you will not have to sharpen) the handle design is quite nice.

I wish someone had wrote a review like this for me when I started purchasing carving tools. I own two cherries, marples, dockyard, Mora brand and many others. To sum this up, this brand of tools can be used effectively as a beginner all the way through to advanced users.

I purchased these tools to augment my carving tools collection. I carve wooden native flutes, masks and staffs, and also chain saw sculpture. I need good sharp quality tools i can rely on. Flexcut has always followed through.

my favorite flexcut is the carving jack- always handy and easy to transport- I can whittle anywhere. I recommend Flexcut tools for amature and professional alike.

I had bought each knife independent from the set about 8-10 years back, but i have all four shown in the set. I have carved to the moon and back with this set, and still looks as fresh as the time that i had purchased them.

I have used these knives on many differing types of woods without fail. By far the best compilation of carving knives i’ve used thus far. You can’t go wrong!.

Firstly Global knives for me are the just the best. well balanced, sharp, light and good looking. If you have never used before you will fall in love instantly. As for this knife, I bought a great set of 6 Global knives and block from Amazon, however the set was missing a carving knife.

so of course had to remedy that. This was the one I chose, and it, as expected, was great. Makes short work of your Sunday roast without ripping your carefully cooked meat Completes the set perfectly.

If you already own any global knives I dont need to tell you how amazingly sharp they are. A decent set of knives is something anybody who enjoys experimenting in the kitchen should have, and I cant rate global highly enough.

You get what you pay for with global. The carving knife is a great addition to my set, and effortlessly carves any meat. My only suggestion to anyone looking for new knives is that the.

I’ve had this knife now for almost a year and it’s my go to for cutting vegetables and fine prep work. Blade is angled very sharply which allows for accurate cuts without mashing delicate vegetables or fruits.

Main critique is that it does not have enough support on the top of the knife if I am cutting through thicker cuts of meat or hard root vegetables.

This knife is the best knife I’ve ever owned! It’s well balanced, German made from forged steel. It’s easy to keep sharp, and it is very sharp, with a few runs with a honing rod. Haven’t needed to sharpen it yet.

It does come with complimentary sharpening service (just need to pay for postage) and a lifetime warranty. It has a full yang and white handle that doesn’t feel cheap and has a good grip. The white I think is a nice touch and certainly a nit diffetent but still nice.

I was a bit worried about possible staining from veggies etc but having used it I don’t think that’s an issue. The price was the cheapest I could find by far and delivery was prompt and well communicated.

I’ve always wanted a good quality knife for cooking and I’d heard a lot about Wusthof as a maker. This is my first one and it’s all the knife I could hope for and more. The quality is superb and the sharpness is insane.

I thought I’d seen sharp knives before but this is on another level! It makes slicing effortless. The balance is perfect, just in front of my index finger. So even though it’s not a light knife it takes no effort to you.

And due to the excellent blade shape it can rock back and forth for cutting herbs really well. The length at 18cm is perfect for me. You can still choke up on the knife for more detailed work but you have enough length to cope with most tasks you will encounter.

I couldn’t recommend this knife highly enough.

My 50 year old knives finally wore out and I replaced them with the GreenPan knives. Best knives ever!! Beautifully balanced and sharp as anything I’ve ever had. Had no idea what adverse conditions I’ve been working under all these years! Now I know what I’m going to get friends next Christmas.

Just the right size. Fits perfectly in the hand. Great for paring and other little cutting jobs. Beautiful shape and beautiful as an object because made of one material – handle and blade.

Bought as an add on when buying a pan to get free postage, but turned out to be the best veg knife I’ve had. Beautifully made, well designed, excellent quality, holds its edge and a firm favourite with whole family.

Always impressed by Shun products quality and consticency. My husband is a Chef and this is the only brand we buy/use in our household. After using japanese steel like this, you too will find it impossibly to purchase any other knives for the rest of your life.

The sharp blade of the carving knife make slicing meats a delight. It cost me a lot more than what I’m used to but after seeing the difference the benefit far outweighs the cost

Absolutely love beaver craft products and had to add this one to the set. It is great for small, precise cuts, and all of the finer details. Cannot go wrong with adding to your tool set. If you are working in smaller areas or anything little this will help a ton.

Knife was sharp out of the box. handle was finished well and had a nice grip. holds the edge well and requires the occasional few passes on the strop to get it sharp again.

Good sharp blade that feels like it will last. More flex than others, but less brittle and probably able to take a little more misuse (tip is still there despite occasional prising). Quickly got used to the unusual handle shape but I did have to sand away the high gloss varnish finish which made the knife feel slippy.

I was recommended this as a starter kit for knife carving. It’s okay. I personally had trouble holding them correctly and the blades don’t hold their sharpness for very long, despite regular stropping.

I also found the blade on the detail knife too thick and meant stop cuts in particular were often difficult to accomplish successfully, especially on Lime and Jelutong blocks and even on Basswood, and I was inevitably switching back to my Mora 120 to do these cuts with some precision.

However, I wish that i’d’ve listened to a number of people on the Beginner Woodcarvers group on Facebook and paid a little more and purchased either Helvie or Drake Knives. Unfortunately no one stocks either brand in the UK, so I ordered directly from Drake and they are much higher quality knives with superior blades and much easier to work with.

I think Axminster are a decent company and this is not a reflection on them. However, considering the high quality of the majority of thir stock I think they’re missing a trick not stocking Drake or Helvie knives for the UK market.

Excellent starter set. They come sharp, but it doesn’t take long for them to lose their edge. Get some leather and make up a strop, as you will need it almost immediately. Also consider a set of cut resistant gloves as these knifes will cut flesh with just a touch.

I use culinary gloves and they work great.

I love flexcuts line of carving knives. They come with a really good quality and fully sharpened so that you can get right to using them. I have used these a little bit but so far I am quite satisfied.

I have another set Ive used previously that I am glad to have purchased. If your new to the world of wood carving, this is a GREAT set to start off with.

it crackles and crackles, the smell of the bread flows into the nose, the warm handle of the knife seems to invite you to cut more slices than necessary, a feast for the senses! For me, the bread knife is one of the most important knives of all.

And I have been searching for several years for a knife that has the qualities to accompany me for a long time. Thanks to the Pott manufactory: I don’t want to cut with another bread knife today. THis cut like butter and made the slices very even and consistent. This knife is highly recommended.

We have only had cheap knives until recently. We bought a really good carving set for our son at Christmas and my husband bought one for us. He is the chef on Christmas Day and most other days. He was delighted with them.

I must say, I did notice a difference. As his birthday approached, I was left with little idea about what to buy him until I saw the knives for sale. I picked this 2 set one. He said he absolutely loves it.

I have recently used it and I can feel the difference in the weight feeling in the handles. , but they actually make cooking a lot easier with great blades. I had read the reviews and appreciate those who took time to write a review.

For the man who loves to cook and finds it relaxing, this is the best present I could have bought him. This is not all I bought him from here.

I have a couple of Scanpan Chef’s knives now one I’ve had for about 8 years and I’ve been happy with the brand. This one is becoming a daily favourite, all knives have a different feel, different ‘hold’ if that makes sense and I like the feel of this one.

It would be difficult to cut oneself whilst using it which is pretty important. I never put my good knives in the dishwasher which helps them last I think. 4 Stars not because of problems, I just prefer finer blades, cost is the issue with those but overall I’m very happy with the Scanpan brand and the specials are always good.

Nicely balanced and well made knife with a decent forging into a good handle that fits nicely into the hand; it isn’t a knife made form a pressed steel sheet with a handle formed around one end. Blade is well designed so that sharpening actually works as not all knives are able to sustain an edge after a few resharpenings.

Excellent value and would recommend (and we have a few knives with which to compare).

I bought a beautiful ikon creme knife set but the block the gave me is hideous. I don’t mind natural variety in wood but parts of it look like it came from different types of trees. I asked to exchange it for another color and provided photos of what was advertised versus what i received and they refused to do an exchange, and also said they couldn’t see a difference between the ad photos and what i received.

I wish i could add photos but am unable to here for some reason. I paid $800 bucks and they wouldn’t exchange it even though it was still wrapped and they had the other block color available on the website.

I think they have a lifetime guarantee on the knives but they dgaf if you are happy with the whole product. Will send this particular purchase right back where it came from.

The chefs knife on its own is a good knife for small hands, it’s well balanced and stays sharp. But it’s no replacement for the fully forged version. It doesn’t have the weight or control. Regarding the paring knife, it’s a lightweight knife and too small for my hands (I’m 6’5, big hands).

It feels like a small steak knife. Does stay sharp though. The sharpener drags the score down. Its taken chunks out of some of my knives with the honing side. The sharpening side works ok, but if you are buying for the sharpener I’d avoid.

Good value overall on deal for approx $130 at Myer. I’d not buy at full price.

I ordered this set as a stepping stone to continue practicing my Lino cut work. I have been using the speedball hand tool and these are definitely an upgrade. Someday I’ll be able to move into even higher quality tools but I’m more than pleased with these for now.

The wooden box, I’m sad to say, was very broken when it arrived. I would have liked to keep but luckily none of the tools inside were damaged.

Flexcut tools were recommended to me by a friend who does a lot of intricate wood carving of fish and birds. It is my first carving set. While the blades fit snugly (they better), it takes a little muscle to get them in place.

They are very sharp and ready to use. Do take their advice and use the sharpening strap about every 30 minutes of use. saves having to stone them. I plan on buying a couple extra work handles. the type of carving I’m doing requires switching cutting tools too often; more handles=more convenience.

The only way to really get a better carving set would be to pay MUCH MORE for one of the Swedish sets. If you are a beginner or just an occasional carver, there is no need to look further. This would also be a great set for fine finishing work such as scroll patterns on Kentucky style rifles and picture frames, detailing duck decoys, etc.

Very glad I bought them. best price found was on Ebay. saved $70 over well known supplier’s offer.

Great quality and variety of chisel blades for the price. Flexcut’s tools arrived super sharp, all I had to do was a few runs over the included honer. The well selected variety of tool ends covers what most carvers will need, thus the wonderful advantage of the Flexcut interchangable system.

I was surprisingly pleased with how well the chisel ends change in and out and are sure handed when working with them. Felt no different then using my higher priced Swiss chisels, and Flexcut kept its edge just as well.

For a beginner or advanced wood carver this set is a treat that doesn’t break the bank, you won’t have to waste time sharpening them before using, and the two different handles allow you to use what works for you.

Palm, or long handles both feel great in the hand and so far have had no problems with holding tight tool ends and being able to change them out easily. The first time the wood handle took me a bit to get the blade in but after I took a glop of glue from the corner of the opening I’ve had no problems.

The box the carving set arrives in is well made and the entire kit is a one stop shop for any wood carver, or person who uses these for other arts. Chisels, knives, a fab Honing system with jeweler’s rouge, intro DVD, bandaids, sharpening instructions and genral care all for the price of about 2 of the Swiss made chisels.

I own several of these carving knives, over a dozen. When I am carving I don’t like to stop to sharpen. These blades are quick and easy to change, so I can do all my sharpening at one time. If you do not sharpen, the blades are cheap enough to toss and replace.

The knives are affordable that I can put one in the hand of every student in a carving class, and durable enough to take that kind of punishnent.

I use this X-Acto knife to reach tight areas on my polymer clay sculptures. The handle prevents the knife from turning in my hand and the curved blade gives me excellent control for precise trimming and cutting.

I used this to cut cardboard and really thick paper. It was perfect! Cut through super easily and very clean cuts.

I bought the long skew and short skew Kirschner chip knives. I found them to be made from low grade steel that wouldn’t hold an edge. The blade is also the wrong profile for chip carving. When I adjusted the profile I found that the tip bent in use.

Definitely a disappointing purchase.

Great value for money knife, holding its edge well and easily takes a good edge when using a strop and honing paste – what’s not too like. I have some Pfeil and Sloyd carving knives (the Sloyd ones being a lot more expensive) and I wouldn’t hesitate to put them all in the same ability bracket.

You won’t regret these tools.

Excellent steel 62-63 on the Rockwell scale but only had a basic grind I am working to correct this with a Water stone and strop but very happy with the product overall
