The agave is a spiky-leafed member of the lily family (it is not a cactus) and is related to the century plant. By Mexican law the agave spirit called Tequila can be made only from one particular type of agave, the blue agave (Agave Tequiliana Weber), and can be produced only in specifically designated geographic areas, primarily the state of Jalisco in west-central Mexico.

At the distillery the piñas are cut into quarters. For Tequila they are then slowly baked in steam ovens or autoclaves (oversized pressure cookers) until all of the starch has been converted to sugars.

For Mezcal they are baked in underground ovens heated with wood charcoal (which gives Mezcal its distinctive smoky taste). They are then crushed (traditionally with a stone wheel drawn around a circular trough by a mule) and shredded to extract the sweet juice, called aguamiel (honey water).

The fermentation stage determines whether the final product will be 100 percent agave or mixed (“mixto”). The highest-quality Tequila is made from fermenting and then distilling only agave juice mixed with some water.

Mixto is made by fermenting and then distilling a mix of agave juice and other sugars, usually cane sugar with water. Mixtos made and bottled in Mexico can contain up to 40% alcohol derived from other sugars.

By Mexican law all 100% agave or aged Tequila must be bottled in Mexico. If a Tequila is 100 percent agave it will always say so on the bottle label. If it doesn t say 100% it is a mixto, although that term is seldom used on bottle labels.

This blanco is wonderfully supple with butterscotch flavors that come from the five day fermentation of the agave. There is no barrel aging yet it tastes so rich! Guillermo Erickson Sauza, a fifth-generation family member, produces Tequila Fortaleza, using traditional techniques.

This is a beautiful artisan hand-crafted, stone milled tequila. Tequila Fortaleza is produced entirely within the walls of their estate, using centuries old traditional methods which, although are very labor intensive, create a tequila which is unequaled in taste and smoothness.

Using an old oven with its meter thick brick walls, they cook their agave for thirty-six hours. Then they crush or mill the agave as Guillermo’s Tatarabuelo did over 135 years ago in our stone mill called the Tahona.

The crushed agave is then washed with the pure mountain water from the Volcán de Tequila to separate the pulp from the woody fibers to create an agave juice called mosto. The woody fibers of the agave, called bagazo, are removed at this time and taken to the fields to use as compost.

The agave mosto is then fermented naturally for five days in small wood vats, and then double distilled using small, labor-intensive copper pot stills. The result is authentic tequila, created by people who care about keeping it traditional.

In the highlands of Jalisco, Mexico, expert jimadors are carefully tending to the estate-grown, blue weber agave that are used to craft Cimarron Tequila Blanco. The agave, which are grown along Jalisco’s hillsides at an elevation of 4,600 feet, have an average brix of 24-26° (brix is the measure of sugar content in a plant).

This brix, which is nearly twice the average brix in ordinary agave, result in an incredibly bold and sweet tequila. Once the agave have matured for nearly a decade, the jimadors hand-select and harvest the plants believed to be the most ripe and flavorful.

Then, the hearts of the agave, or piñas, are then taken to the distillery where they are slowly roasted in ovens for two to three days. The roasting process caramelizes the piñas natural sugars, and causes any excess water to evaporate.

One the piñas have been roasted, they are crushed and the remaining pulp is fermented using naturally occurring yeast. Following fermentation, the wash is distilled through a copper alembic still and then immediately bottled by hand.
